Ok so first please ignore the photographs because they don't do the cake justice- I made this cake without having a beater therefore it is usually much, much more fluffier than appears. It was my first cake attempt in the new house in Italy which explains the lack of all kitchen utensils. So sorry David Rocco, please don't judge me.
Roccettes' Apple Yogurt Cake
Ingredients
325mL flour
pinch of salt
pinch of cinnamon
125mL sugar
200g melted butter
2 eggs
125mL yogurt
2 apples, peeled, cored, thinly sliced
zest of 1 lemon
75mL sugar for topping
Pre-heat over to 180 degrees C and butter a 20cm pan, could be round or square.
Mix flour, cinnamon, salt.
In another bowl, beat the sugar and the melted butter until airy and slowly add the eggs. Reduce speed of the mixer and add the flour, alternating with the yogurt until everything is added. Then stir in the sliced apples and zest as below...

Next, pour the batter into the pan and sprinkle the top with sugar. Bake for 40 minutes.
